Puding Raja and Jala Mas

I use old diaper to get only the egg yolk. I bought the diaper but never use it.
It looks like it is perfect to seperate the egg yolk from the white one.

I prepared the puding raja and jala mas since my friend ordered it. She said it was for her daughter who is pregnant. Her daughter has an appetite to eat the dish. I refused to prepare it but considering the reason mentioned, I prepared it also. I got up early in the morning; 4 am just to ensure that I could deliver it to her at 9.00am on that day. I didn't take any payment for the work done (my husband required me not to do so). So, I just asked her the money I spent in buying the ingredients. She gave me a double pay when she paid me the other day, alhamdulillah...

a) Ingredients for the puding raja
  1. 2 kilos of pisang raja (this is the most suitable banana for this dish)
  2. oil for frying
  3. For garnishing you need: cherries (red and green), raisins, cashew nuts (that you fry without oil for a while) and prunes 
Preparation procedure for the puding raja

In a wok, pour in the oil. When the oil is heated, fry the bananas until golden brown. Drain and dry. Then, put them aside to cold

b) Ingredients for the jala mas
  1. 20 eggs yolk
  2. 1 and a half cup of sugar 
  3. 2 cups of water
  4. banana leaves (shape them like ice-cream cones with very very small hole below them. Make 2-4 because they might be broken during the process of 'menjala' later). If they are big, they  turned out to be quite ugly just like the the jala mas you see in picture 4 (the container in the first and second row on the left)
Preparation procedure for the jala mas

Seperate the egg yolk from the white. Stir it slowly. In a wok, pour in the water and sugar. When there are bubles surfacing the mixture (of water and sugar, hereinafter called syrup), take the banana leave that you have made into an ice-cream cone like shape. In a circle motion, move the ice-cream cone like shape in the wok.  Look at the picture below at how you need to to move the leave, just like forming mosquito coil. The smaller the gap between each layer, the better. p/s: When the syrup is thick during this process, pour in hot water


c) Ingredients for the gravy
  1. 1 can of evaporated milk (I use Saji brand)
  2. 1 can of water (you use the evaporated milk can to measure the water) 
  3. 1/2 cup of sugar (I you can extra sugar if you want the gravy to be much sweeter)
Preparation procedure for the gravy

In a cooking pot, pour in the evaporated milk. Then add water. And finally add in sugar. Let it boil before turning off the stove. Make sure you always stir it to avoid the mixture to form bubbles. You may also put screw pine leave for fragrant if you like. But I don't put.  It was still dark outside so I didn't dare go and pluck it.


Serving the puding raja


In a bowl, arrange the bananas. Then put prunes on top of them. Then spread raisins, cherries and cashew nuts. After that, spread the jala mas on these ingredients. Then, pour in the gravy. It is sufficient that you pour it to cover the ingredients mentioned. Serve it cold (perhaps you can store the gravy in the fridge for a while before serving). Happy trying..

    puding roti


    Untuk berbuka salah satu ramadhan tahun ni. Resepi asal dari lokasi besa. 
    1. sebuku roti
    2. 4 biji telor
    3. sedikit marjerin
    4. sesudu kecil esen vanila
    5. setin susu cair 
    6. cherry merah utk hiasan
    Prosedur:
    1. Roti disapu marjerin (semua roti)
    2. Roti diatur cantik didalam loyang
    3. Putar telur dan gula
    4. Kemudian masukkan susu cair dan esen vanila
    5. Kemudian curahkan ke dalam loyang
    6. Bakar sehingga kekuningan sedikit (dalam 15-20minit)

    puding ala-ala raja

    I call this puding ala-ala raja since I was not able to make the urat mas. I did try but it turned out to be something that I won't dare to eat although eggs and sugar are used for the ingredients. Anyway, here's my version of the pudding. Adapted from few online recipes for this dessert.  

    Bahan-bahan yang diperlukan:
    1. 2 tin susu cair yang dicampur dgn sedikit air (kalau tak nak masak susu cair ni, gunakan shj. air yg dah dimasak)
    2. 2 sudu besar tepung kastard yang dibancuh dengan sedikit air utk pekatkan susu
    3. 1/2 sudu teh garam
    4. 5 sudu besar gula
    5. sesikat pisang lemak manis yang kulitnya baru sedikit kuning dibuang kulit dan digoreng dengan minyak sehingga kekuning-kuningan lalu ditoskan.
    6. 1/2 paket prune
    7. 1 paket gajus 
    8. cheerry merah dan hijau 
    9. 1 tin cocktail 
    Cara penyediaan:
    1. Susu cair bersama gula  dikacau di atas api perlahan sehingga sedikit mendidih lalu dicampur dengan tepung kastard yang sudah dibancuh.
    2. Di dalam mangkuk, atur pisang lemak manis yang telah digoreng tadi lalu dituangkan susu cair/ kuah. 
    3. Taburkan biji gajus masin, cherries, prune ke atas puding 
    4. Campur buah2an cocktail. 
    5. Sedia utk dihidangkan. Lbh elok kalau kuah tadi disimpan dalam peti sbb sedap makan sejuk2 gitu!

    Puding Karamel/ Puding gula hangus

    All-time hubby's favourite pudding. Kat pasar malam I supposed it costs RM1.50 kalau tak silap kat bazar ramadhan ni. Ari tu buat tak jadi karamel dia. Buat kali ke-2, boleh tahan sikit. Resipi ni modify from My Resipi utk puding karamel.

    Bahan2
    1. 400ml susu segar/susu cair
    2. 5 sudu besar gula halus
    3. 3 biji telur- pada suhu bilik
    4. 2 biji telur kuning-pada suhu bilik
    5. 2-3 titik esen vanila
    Bahan2 buat karamel/ gula hangus:  
    1. 5 sudu besar gula
    2. 2 sudu besar air 
     Cara penyediaan:
    1. Sediakan karamel: Masukkan gula ke dalam periuk dengan 1 sudu besar air. Masak di atas api sederhana. Bila nampak sedikit perang, masukkan 1 sudu lagi air. Masaklah sehingga perang. Tuang ke dalam loyang. Ketepikan.
    2. Masukkan telur dan kuning telur ke dalam mangkuk. Sambil dikacau masukkan gula sedikit demi sedikit. Kacau dengan perlahan sehingga sebati. Jangan biarkan berbuih.
    3. Dalam periuk lain masukkan susu dan esen vanila. Panaskan sehingga 60 degree. Jangan sampai mendidih.
    4. Dengan susu yang masih panas lagi, masukkan sikit demi sedikit susu ke dalam telur tadi. Kacau sehingga sebati. Tuang ke dalam loyang yang ada karamel tadi.
    5. Tutupkan loyang dengan 2 lapis aluminium foil. Kukus dengan api sederhana selama 30 minit
    6. Atau boleh juga dibakar di dalam oven. Tapi perlulah diletakkkan air suam ke dalam dulang pembakar. Bakar selama 40-45 minit pada suhu 150 degree.
    7. Bila dah masak. Jangan buka aluminium foil. Biarkan 5 minit. Kemudian bolehlah dibuka.
    8. Bila sejuk bolehlah disimpan dalam peti ais 
    ~ Aritu tak letak alumunium foil, so permukaannya tak berapa cantik. Anyway, mmg jap sgt buat pudding ni...On time jer masa nak berbuka siap.

    Another ramadhan recipe. I got this recipe when I browsed My Resipe for puding karamel. Since, I was not able to make the caramel, I therefore name this recipe egg pudding. It was not the first that I couldn't make the caramel...in fact 2 or 3 times. Poor me...I still need more practice of making this pudding for sure.
